Sustainability isn't a buzzword for us — it's the foundation of everything we do. As an urban farm, we have a unique opportunity (and responsibility) to prove that food production can be regenerative, local, and waste-free.
Our Zero-Waste Commitment
We divert over 2,400 pounds of coffee grounds from landfills each month by using them as our primary growing substrate. After mushroom harvesting, spent substrate is composted and donated to community gardens. Our packaging is 100% compostable or recyclable.
Carbon-Negative Operations
By growing food on existing rooftops within the city, we eliminate transportation emissions entirely. Our mushrooms travel zero food miles. Our rooftop installations also provide insulation for the buildings below, reducing energy consumption. Through carbon offsetting partnerships, we have achieved carbon-negative status since 2024.
Water Conservation
Mushroom cultivation requires significantly less water than traditional agriculture — 85% less than most crops. We use rainwater harvesting systems on all our rooftop farms and recirculate water through closed-loop misting systems.
Energy
All our farms are powered by renewable energy through a partnership with a local solar cooperative. Our climate-controlled growing environments use energy-efficient LED lighting and natural ventilation where possible.
Community Impact
We donate 5% of our harvest to local food banks. We offer free and subsidized workshop slots for underserved communities. Our educational programs have reached over 2,000 students since 2021.
Packaging
We use compostable kraft paper bags, recyclable cardboard boxes, and plant-based produce wrap. We offer a 10% discount to customers who bring their own containers to our weekend market.
